Kale is a super food! Yes, it could wear a cape! But seriously, if you sat down and looked at all the nutrients in Kale, you would want to add this to your next smoothie, salad, or soup! Just one cup of kale contains extremely healthy amounts of Vitamin K, Vitamin A and Vitamin C, not to mention the complete benefits of a healthy fiber too! One jOILful tip... make sure your kale is ORGANIC. Kale makes the list from the EWG group as one of the veggies that have a high level of pesticide residue (https://www.ewg.org/foodnews/list.php).

WebMD, even raves about this super food, "The Benefits of Kale: At just 33 calories, one cup of raw kale has nearly 3 grams of protein, 2.5 grams of fiber (which helps balance blood sugar and makes you feel full, ), Vitamins A, C, and K, Folate, a B vitamin that’s key for brain development, Alpha-linolenic acid, an omega-3 fatty acid. (While kale has far less omega-3 than fish, it is another way to get some of this healthy fat into your diet, Lutein and zeaxanthin, nutrients that give kale its deep, dark green coloring and support eye site, and contains minerals including phosphorus, potassium, calcium, and zinc"

Sooo, how does our family use this good for you, super food, that really doesn't have a cape, but really should?

1. In soup, especially minestrone! I put at least one good handful into our soup,

2. In a smoothie.. We love to add fruits and veggies to our Balance Complete or Slique Shake smoothies. A few freshly washed leaves will do when making a batch for the family.

3. In a salad... Oh, yes, a salad with my favorite salad dressing! In essence, the dressing is 3 parts oil to 1 part balsamic vinegar. I add two drops of Lemon Vitality Essential

Oil and one drop of Black Pepper Vitality Essential Oil, one tsp of dijon mustard, a pinch of real salt and 2 tbsp of water.
